This weeks recipe is Keto Candied Caramel Pecans.  These are delicious easy to make keto snack, with only 4 ingredients its a nice sweet keto treat that will hit the spot when your craving something sweet.  We absolutely loved this recipe and we are sure your family will as well.

So don’t even get me started talking about pecans….it’s right up there with my love of shoes! In fact CJ has actually bought me pecans, in lieu of flowers, as a gift before! That’s how deep my love runs for this nut. You could say I’m NUTS for them…..

My favorite way to eat them is just butter roasted and salted. We have a recipe up on our channel for doing this quite easy process. But, we thought a variation for those wanting a bit of sweet for their nuts was in order.

A few tips….watch your nuts so they don’t scorch….get to know your oven, and how it heats. I’ve made these so often, I know exactly the timing roasting pecans takes in my oven. Definitely use less time initially!

Some interesting facts about pecans: It takes 12 years for a pecan tree to mature. When grown in ideal conditions, it can live and stay productive for over 200 years.

The only major tree nut that grows naturally in North America, the pecan is considered one of the most valuable North American nut species.

The name “pecan” is a Native American word of Algonquin origin that was used to describe “all nuts requiring a stone to crack”.

Some of the health benefits of pecans include reduced risk of high cholesterol levels, hypertension, diabetes, gallstone disease and cancer. It has antioxidant properties and helps in weight management. It is also helpful in protecting the nervous system and may delay the progression of age-related motor neuron degeneration, such as diseases like ALS. Plus they just taste freaking fantastic!

Keto Candied Caramel Pecans

Equipment

  • Large Sauce pan or Dutch Oven

Ingredients

Instructions

  • Melt the butter in a saucepan over medium heat
  • Once the butter is melted, add the brown sugar substitute to the saucepan, and stir constantly until melted
  • Add in 2 teaspoons of vanilla extract, and stir to combine
  • Continue to cook down the mixture, stirring frequently for 7-8 minutes until it begins to thicken
  • Remove the saucepan from the heat, and add in the pecan halves. Toss to coat them all well
  • Place the coated pecans in a single layer on a parchment paper lined baking sheet
  • Put the pecans in the refrigerator for 1-2 hours to cool and harden
  • Once ready, break apart any chunks of pecans, and serve as is. Store extras in an airtight container
