Keto Cheeseburger Shepherds Pie Casserole

The original recipe was for a cheeseburger cauliflower casserole, but due to me not really following directions, I ended up creating what we are calling a Cheeseburger Shepherds Pie.

 

Ingredients

  • 1 – cups of microwaveable cauliflower *I ACTUALLY USED 2 CUPS IN THE VIDEO*
  • 1/4 teaspoon salt
  • 6 Oz of cooked crumbled bacon *I used bacon crumbles from Costco*
  • 2 pounds of ground beef
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 cup of shredded cheddar cheese

Sauce
1 tablespoon butter
1 tablespoon Almond flour or choice
1 cup heavy cream
2 tablespoons yellow mustard

COOKING INSTRUCTIONS

Step 1:

Cook and brown your 2 lbs of ground beef, add your 6 – 8 ounces of crumbled bacon to your ground beef along with your seasoning and let simmer.  Once your ground beef and bacon are throughly cooked set it aside.

At the same time microwave your 2 bags of cauliflower.  After you have microwaved and softened your cauliflower either use a food processor or mash by hand your cauliflower into a cauliflower mash.

Step 2: Making Your Sauce

  1. *Preheat oven to 350 degrees F.
  2. Add the butter to the same skillet and stir in the flour over low heat. Cook until the flour has absorbed the butter then add heavy cream and mustard.
  3. Continue to cook on low heat until the sauce thickens.

Step 3:  Assembling Your Casserole

  1.  Spread half of your sauce in the bottom of your casserole dish
  2. Spread your mashed cauliflower over your first layer of sauce
  3. Spread 1/2 cup of shredded cheddar cheese over cauliflower layer
  4. Spread your ground beef and bacon mixture over the cauliflower
  5. Pour your remaining cheese and mustard sauce over your ground beef layer.
  6. Add your additional shredded cheese* If needed
  7. Bake for 30-45 minutes at 350 depends on your oven

Let cool and enjoy.
