Greek Lemon Skewers

1 1/2 pounds chicken, breast or thigh
3 TB lemon juice
1TB red wine vinegar
1 TB extra virgin olive oil
1 TB Minced or powder garlic
2 tsp dried oregano
1/2 tsp dried parsley
3/4 tsp kosher salt
1/2 tsp black pepper
Lemon Skewer Instructions
Take 1 1/2 pounds of chicken, breast or thighs and cube. Place in a large plastic bag. Then prepare your marinade. Mix all of your wet ingredients and spices together (mix well). Pour your marinade over your chicken and let the mixture coat your chicken well. Let marinade for 30 minutes – 2 hours (Do not marinade longer than 3 hours, chicken will begin to break down)
After your chicken has marinaded using wooden skewers begin adding your chicken to the skewers and cook either over a grill or using a grill pan.

1 cup diced English cucumber (or regular peeled)
1 1/2 cups plain Greek yogurt
Juice of half a lemon
1 heaping TB fresh chopped dill
1 tsp garlic powder (or fresh if preferred)
Salt and pepper to taste
Preparation Instruction for Tzatziki Sauce
1. Dice 1/2 of a English Cucumber (about half of one), using a food processor.
2. Add 1 1/2 cups of plain Greek Yogurt (full fat if you can find it)
3. Squeeze the juice from a half of lemon.
4. Add on TB of fresh chopped dill.
5. Add 1 tsp of garlic powder
6. Salt and pepper to taste.
Mix all of the ingredients together well and let rest to let flavor meld together. Chill and then serve with your Lemon Skewers.
