This weeks recipe is Keto Berry Whips!  This is easy to make keto friendly dessert that will hit the spot on those hot summer days.  They are delicious and very satisfying.  This is one of those recipes that you just need to keep in your arsenal to help you succeed on Keto long term. Being a child of the late 70s early 80s… Jell-O gelatin pops were the “healthy“ alternative to their sister product Jell-O pudding pops… Which was also a family favorite :). Because they were made with fruit, which obviously made them healthier, right? LOL. I remember sneaking out to my grandmother’s giant white box freezer in the middle of summer to help ourselves to both Jell-O pudding pops and gelatin pops. They came in three flavors, strawberry,orange, and cherry… according to Wikipedia Jell-O gelatin pops originated in Baton Rouge Louisiana in the 1970s and in its first year it earned $100 million and after five years it was earning $300 million a year… Despite strong sales in to the 1990s they were eventually discontinued due to not being profitable… Who understands marketing? Sound profitable to me…To this day gelatin pops still bring back great memories.… I wanted to create something that was similar in texture, but could be made in a low sugar variety, and without a stick ,ha ha.

Boring old Jell-O gets a major upgrade with the addition of full fat Greek yogurt. This simple addition transforms into a creamy dessert that is light in texture, rich in flavor, and just the right amount of sweetness combined with notes of tanginess.

Simple flavors, simple steps… This really isn’t a recipe at all. If you’re familiar with Jell-O, I’m sure you already know how good it is… Especially in the summertime when things can be quite warm(well maybe not here in the PNW, but here’s hoping we get a bit of warm weather eventually)and you would like a cool refreshing dessert without heating up your house.

Adding Greek yogurt, gives this dish a superb creamy taste, added fat and protein, and transforms what could be considered gel- like boring texture and flavor into a creamy silky dessert that is almost like eating a soufflé.

It’s light in texture, rich in flavor, perfectly sweet and a super quick dessert to throw together on a hot summer day hip hip hooray for desserts that don’t require baking.

You can use any flavor Jell-O you desire… Or can find, as that seems to be the problem of the day LOL. You can also add fresh fruit or some fresh whipped cream over the top if you’d like, to give it a little added flourish. You might even fool people into thinking that you made a fancy French dessert for them.

Definitely look for full fat Greek yogurt. I used Fage brand’s 5%….you really don’t want “low-fat” if you can help it.

I put mine in individual dessert dishes, but you can use one large bowl.

Extra”whipping” time in the blender really gives these whips a lighter-than-air texture!

So I’m fortunate enough to always get to try and experience new keto/low carb dishes.   99.99% of them are absolutely delicious and this is one of my new favorites.  This really is simple to make, I should know because I filmed and watched and edited the video so I’ve observed the entire process at least 3-4 times.  This is a very versatile recipe, and you can use any flavor of Jello that you prefer.  We’d actually planned on using the “Simply Delish” Jel Dessert product.  However, after we purchased a 4 pack we realized that the ingredients this product was made with might not work for this dessert recipe, this product doesn’t use gelatin, it uses carrageenan which is a plant based thickener that is widely used.  That is not a knock on that product at all, we just didn’t want to take the chance that this product wouldn’t work for this dessert.  The Simply Delish is sweetened with Stevia and Erythritol which is much healthier than maltodextrin.  However, the amount of sugar free jello that is used is very small and it’s spread out over 5 servings, however it’s your choice so use whatever products fit into your keto lifestyle. Another options for the Jello is to use unsweetened gelatin and then add flavoring of your choice.   Sarah actually made two batches of this recipeSarah and I do all of the CjsKetoKitchen work in between raising a family and working full time.  We do often make practice/test versions of the recipe if time permits.   But most of the time it’s “one and done!” We generally shot videos on Thursday’s after I (C.J.) get off of work. So getting a recipe right the first time is critical.  , one earlier in the week mainly for photos and so that we didn’t have a two hour break between making it and letting it chill. Keto Berry Whips

Ingredients

  • .3 ox sugar-free gelatin or plain gelatin plus flavoring.03 oz.
  • 3/4 cup boiling water
  • 1/2 cup ice
  • 1/2 cup cold water
  • 1 cup full fat Greek yogurt I used Fage 5%
  • Berries & whipped cream for garnish optional

Instructions

  • Add gelatin to a small bowl. Boil 3/4 cup water in a small saucepan or microwave. Add to gelatin and whisk until thoroughly dissolved. Add ice combined with cold water to mixture of equal one cup. Pour ingredients into blender. Add Greek yogurt. Whip on high for one minute or longer until well combined and frothy. Pour into dessert glasses, or one large bowl. Chill 2 hours or overnight. Garnish with berries and whipped cream if desired. Makes 4 one cup servings.

    I have read where carrageenan can be a cancer causing agent. Don’t know if that is true but I try to stay away from anything with this ingredient in it. Fairlife chocolate protein drink, (which is delicious) also has this ingredient in it. Tastes just like chocolate milk. Darn! Oh well I will try your recipe with SF Jello. It sounds amazing.
