Broccoli and Bacon Salad

Keto Broccoli and Bacon Salad | Low Carb | Family Friendly | BBQ Ready

As part of our “Summer Gatherings” recipes series this week we bring you a delicious Keto Broccoli and Bacon Salad.  Broccoli salad has long been a favorite for BBQs, and other family gatherings, you’ll find it at many grocery store deli’s.  The problem is that most are loaded with sugar, and other high fructose carbs like, cranberries and raisins, which are not best for Keto.  Well we’ve Ketofied this recipe and we guarantee that everyone will love it!

Ingredients

  • 5 Cups of Raw Chopped Broccoli
  • 1/2 of one Medium Red Onion
  • 8 Slices of cooked bacon or 1 cup of Bacon Crumples
  • 1 cup of Grated Cheedar Cheese
  • 1 Cup of Broccoli Slaw
  • 1 Cup of Mayonnaise
  • 2 Tablespoons of Range Dressing or a dressing of your choice
  • 3 Tablespoons of Apple Cider Vinegar
  • Liquid Sugar Free Sweetener (Your Choice)
  • Salt
  • Pepper

How to prepare

  1. In a large Bowl add 5 Cups of Raw Chopped Broccoli
  2. Then add 1/2 of one finely chopped Medium Red Onion
  3. Add 1 Cup of Broccoli Slaw (we added a bit more on the video)
  4. Add 1 Cup of Bacon Crumples (we suggest heating these up by sauting in butter to release there flavor) *If your using real bacon ignore that suggestion.
  5. Add 1 Cup of Grated or shredded Cheedar Cheese
  6. Begin to mix all of your ingredients well, and mix until well incorporated.

Lets Make Our Dressing

  1. In a separate bowl add 1 cup of Mayonnaise
  2. Add 3 Tablespoons of Apple Cider Vinegar
  3. Add 4 Squirts of Liquid Sugar Free Sweetener
  4. Mix ingredients well
  5. Add your salt and pepper to taste
  6. Add 2 Tablespoons of Range Dressing (or any dressing of your choice *Or you can skip this step).
  7. Mix all of your ingredients well and add to your salad
  8. Incorporate your dressing well into your salad

Tips

  1. The salad gets better as it sits, we suggest you make this overnight if possible.
  2. As you mix, be sure to mix well from the bottom up.
  3. Before serving we suggest that you mix well as the dressing will tend to settle.
  4. Enjoy this delicious salad.
