This weeks recipe is Keto Cheesy Mexican Skillet!  This is sure to be a hit for the entire family, keto or not.  This is a delicious easy to make one pan recipe, it’s great for those busy weeknights because it’s so easy to make.   This is one of those recipes that you just need to keep in your arsenal to help you succeed on Keto long term. This is going to become a new family favorite! It is delicious, full of flavor, and a super simple dinner idea. It’s an all-one-pan meal so clean up is a breeze.

I am always looking for new, simple weeknight meals to add to the rotation. It’s even better when they only take one skillet, and just a few minutes.

I don’t know about your family, but our family loves Mexican dishes. There are lots of options for keto friendly Latin food recipes with great flavor. And we have made several of them on our channel. But it’s always nice to have variations and choices, and that’s what this dish is all about.

The ingredient list is pretty simple and standard for this one. Cubed chicken is spiced up and cooked together with enchilada sauce seasonings, a bit of tomato and cheese… And of course more copious amounts of cheese is sprinkled on top and baked.

A lot of favorite Mexican style recipes are not considered ketogenic, because most of them make use of beans, rice, and tortillas. However this dish would work very well incorporating these foods as side dishes for you carb eating family members!

Many low carb Latin favorites, include rice cauliflower as an ingredient. We also have several recipes utilizing this versatile low-carb step… But to reduce the carb count in this particular recipe, I did not use it. If you wanted to include this as part of your cheesy Mexican skillet by all means do so.

Some Tips:

Although I adore my new cast iron skillet, You can use any kind of skillet for this recipe. Cast-iron has become very affordable, and last for a long time, if well cared for… We will have one linked on Amazon, which is where I purchased mine. Keep in mind you may need to “re-season” your pan after preparation. The acidity of tomato products tends to wear away seasoning.

This dish would be great for meal prep, and or frozen… You would follow the steps in the recipe up to adding the grated cheese, and then you would just pour it into some kind of storage dish. When you are ready to enjoy the casserole allowed to come to room temperature and then put it in a 350° oven for 20 minutes until it’s hot and bubbly.

If you are out of chicken, or it is more difficult to find in your area but still want to make this recipe, that’s not a problem. You can easily substitute ground beef, or some type of pork. Both would be equally delicious.

Sarah made this dish for us probably a month ago, and I asked her why it wasn’t a recipe on our channel.  I believe she was just trying to use up some chicken before it went bad and this dish was born from that.  This recipe is also versatile, and you could easily replace the chicken for another meat.  You probably could also add and experiment with some different spices or the additions of various peppers.  This dish actually does taste better after it’s had time to sit.  Sarah used a small amount of enchilada sauce, be sure to get a brand with the least amount of carbs.  We hope you enjoy this recipe!  Don’t forget you can share photos or your creations over in the Facebook Group or on Pinterest.

  • 3 lbs chicken thighs cubed cooked
  • 2 TB taco seasoning we used our homemade
  • 1/3 cup enchilada sauce
  • 1 tomato Diced or equal of canned
  • 8 oz Shredded Cheese 2 cups shredded cheese

Instructions

Instructions

  • Cook cubed chicken in cast iron skillet or large frying pan until well cooked and browned.
  • Add taco seasoning. Incorporate well. Add water to scrap drippings from the bottom of the skillet. Add enchilada sauce stirring to mix. Stir in tomatoes. Remove from heat. Stir in cheese.
  • Bake in a 375° oven for 20 to 30 minutes until golden, broiling the top if desired.
  • Serve with sour cream and salsa. May also be served over lettuce, or with low carb tortillas.
