Keto Mock Apple Cobbler at Cjsketokitchen!  This is a easy to make dessert recipe that your whole family will enjoy.  So before you call the “Keto Police” we know that apples are not a keto/low carb friendly fruit.  That’s why NO apples were used in this “Mock” Apple Cobbler.  You will be surprised at what was used and how great this very versatile vegetable taste in it’s new role.  We hope that you enjoy it!

Few dishes are more comforting in fall than a warm apple cobbler…juices still bubbling from the oven, it’s exactly the cozy dessert you’ll want to serve as the weather turns cooler. The tartness of the “fruit”provides a nice contrast to the sweetness in the filling. There also remains some texture throughout the baking process. This cobbler is full of old fashion goodness with a warm spiced filling topped with a sweet biscuit crust for a skillet dessert that is sure to become a family favorite. It’s soft on the inside, crunchy on the outside, and it is truly the best part of any cobbler.

This desert is also really easy to make. The hardest part really is slicing the zucchini to form “apples“. A good peeler and careful coring ensures that. speaking of zucchini……

You may be thinking that zucchini sounds strange, or maybe even disgusting… But trust me, the zucchini dessert is fantastic! There’s a reason why it’s called “mock apple cobbler“ if you do this the right way no one is going to guess that it’s zucchini that’s the fun part.

Trust me on this, this stuff is absolutely mouth-watering and it’s a terrific way if you have excess zucchini on hand, to use it up in a way that is absolutely heavenly… I made “mock” apple crisp several years ago for a recipe collaboration with some other Youtubers. it far surpassed my expectations! I was skeptical, but I saw for myself how delectable this can be. In fact my 8-year old daughter, who is a huge fan of apple pie, gobbled this up with delight, none the wiser that she was not eating apples. Lol.

How is Apple cobbler different from apple crisp? There is a difference between apple crisp an apple cobbler… Just like it’s name, apple crisp as a crispy crumble topping made with oats generally. The topping for this apple cobbler is a smoother batter that is poured or put on top of the apple filling and bakes more cake like.

Some tips:

  • If you don’t want anyone to suspect that you are using zucchini instead of apples, make sure you peel off all of the green skin… You also want to use a spoon to scoop out all of the seeds before you cube your zucchini.
  • Lemon juice or apple cider vinegar is really crucial here. This is what gives it a tart flavor that resembles apples. It’s magic!
  • You don’t have to use a cast iron skillet here, but I love it’s rustic charm, and it reminds me of camping 🙂

This dish was delicious which wasn’t a surprise.  I think Sarah and I still have a little disagreement about whether this is a cobbler or a crisp. I still think it’s a Crip, but no matter it is still delicious.  As I think back over how this is made I have to agree that the hardest part is prepping the the zucchini (the peeling, and removing the seeds).   This lasted for only 2 days in our house, and our kids loved it and to this day still don’t realize that they were not eating apples.  These have absolutely no zucchini flavor in them; but think about this what does zucchini really taste like?  On the second day of course we needed to heat it up a bit, we topped ours with sugar free low carb ice cream which of course is optional.  It was still good the second day, I personally think we could have used a bit more spice.  Keep in mind that zucchini are watery and we found that we had to drain them a second time after we’d added our spices.  But of course spice levels are a personal thing.  We then added more of the cinnamon, all spice… In my opinion you need larger sized zucchini and we are lucky enough to have a SAARS grocery store that regularly carries very large zucchini.   Apparently in the mid-West part of the United States people have been making zucchini cobblers for years – who knew.  So there are lots of recipes for this both non-keto and keto.  This is a nice treat that your family will enjoy.   I think you’ll really enjoy this recipe.  Don’t forget you can share photos or your creations over in the Facebook Group or on Pinterest.

Keto Mock Apple Cobbler

Ingredients

  • 6 cups zucchini cored peeled sliced (744 grams)
  • 1/2 cup lemon juice .12 kg
  • 1/2 cup water .12 kg
  • 1/2 cup brown sugar alternative 110 grams
  • Spices to taste (We used Cinnamon, nutmeg, and allspice)
  • 1 tsp vanilla extract or bean

Cobbler Topping

Instructions

Instructions

  • Place prepared zucchini in a saucepan. Cover with water and lemon juice
  • Simmer for 10 minutes or until tender. Drain excess liquid. Add sweetener and spices.
  • Place in bottom of well greased skillet or baking dish
  • In a separate bowl combine dry cobbler topping ingredients, sift through with a fork to remove lumps. Add butter. Sprinkle topping evenly over “fruit” zucchini.
  • Bake at 350° for 20 to 30 minutes until golden and bubbly.
  • Let sit 15 minutes

    WOW!! Can’t say enough about it! I combined some characteristics of this one and the mock apple crisp. PERFECTION!
    Printed both recipes and combined them best for me… made adjustments, made it 2 days in a row with myore adjustments – wrote everything down so do overs would be EASY! NO!!! Lost the recipe! LOST! How can You loose a recipe IN the house! But all my work lost 🙁 Now I don’t feel so creative but I have a bday to cover. I have to be up to the game!
    Would You please consider adding ballpark amounts of the spices You used? I know You love spicy! But even some slim guidelines right now would help me over my block in making this half as delicious as last time! TY & Bless You MORE for all You do!

        very confused about how the recipe has been rated 3 times but I only see my 5 star rating?? I don’t think the ppl that gave it one star, however they accomplished that… did the recipe according to instructions either.
        The 1st time I made it was GREAT! I now have an apple extract that will up the game and made double topping from the crisp recipe… it is AMAZING! How can they give it bad marks and not even share why they came to that rating? hmmm….???
