You will need to cups of cooked and cubed chicken. We prefer chicken thighs and used about 6 boneless thighs. A Rotisserie would also work for this dish to make it even quicker.
Using a baking dish (we used a 2 quart); grease your dish with a keto friendly cooking spray (coconut, avocado, or olive oil)
Spread your cooked chicken into you baking dish.
Pour in your tomato sauces and mix well together.
Add your seasonings. We used oregano, garlic powder and Trader Joes 21 Seasoning Salute (however any similar seasoning blend would work). Mix in your spices well. Also include salt and pepper to taste.
Add 1.5 cups of mozzarella cheese and mix in well.
Keto Bread Crumbs Mixture
in a separate bowl mix 1/3 cup of blanched almond flour with 1/3 cup of grated parmesan cheese.
Sprinkle your keto bread crumb mix over the top of your casserole.
Bake for 25 to 30 minutes at 350 degrees
When your casseroles begins to bubble, we recommend that you broil the top of your casserole for 2 - 3 minutes (Watch it very closely).
