Creamy Cucumber Dill Salad

Ingredients

  • 2 English cucumbers thinly sliced
  • 1/4 cup red onion sliced (Optional)
  • 7 oz. greek yogurt or *sour cream or mayo or combination
  • 1 lemon juice and zest (or 1/4 cup white vinegar)
  • 2 tablespoons dill chopped
  • salt and pepper to taste To Taste
  • 1 clove garlic chopped (optional)

Instructions



Preparing Your Salad

  • In a separate bowl add lemon zest, finely chopped garlic and dill. Squeeze in your lemon juice.
  • Add your Full Fat Greek Yogurt or Sour Cream, and mix all ingredients well. This will make your cream salad dressing.
  • In a larger bowl place your thinly sliced cucumbers (we prefer English) and your and chopped red onion in a bowl and mix together.
  • Mix your creamy dressing in with your cucumber and onions and make sure your thoroughly coat your entire salad.
  • Add a teaspoon or so of sugar substitute for a hint of sweetness
  • Let the salad chill in the fridge for 30 minutes to let the flavours mingle.

Notes

*6 net carbs using the Greek Yogurt
*If you use Sour Cream or a Sour Cream Mayo mix the carb numbers will decrease.
*If you reduce the amount of red onions this would also reduce the number of carbs.
