Ingredients

  • 12 white button mushrooms or baby portobellos mushrooms with stems removed
  • 4 oz cream cheese softened
  • 1/2 cup Parmesan cheese grated
  • 4 oz Swiss cheese
  • 2/3 cup bacon crumbles rewarmed in bacon drippings (equivalent to 10 slices of cooked bacon)
  • 3 cloves garlic use 1 - 3 based on your personal taste
  • Italian seasoning to taste
  • 2 TB fresh chopped parsley
  • Drizzle of avocado oil

Instructions

  • Place cleaned de-stemmed mushrooms, cap side up in a 9x12 baking dish.
  • Drizzle with avocado oil. Combine cheeses and seasoning in a small bowl. Add chopped garlic and parsley. Add cooled bacon crumbles, stirring well to combine.
  • Stuff caps of mushrooms generously. Sprinkle any remaining mixture throughout dish.. Bake at 375° For 15 minutes. Broil 1 to 2 minutes to crisp and brown tops. Let sit 5 minutes and serve. Can be refrigerated for up to 4 days.
