Ingredients

  • 1 1/2 lb chicken I used canned, chopped or minced finely
  • 2 TB tarragon chopped
  • 2 TB thyme chopped
  • 2 TB parsley chopped
  • Seasoning to taste I used salt, pepper, & 21 seasoning salute
  • 2 eggs beaten
  • 2 TB heavy cream optional
  • 1 cup cheddar cheese shredded
  • 1/3 cup almond flour

Instructions

  • Combine all ingredients throughly. Let chill 15 minutes, or up to overnight.

  • Heat oil, lard, or grease of choice in a cast iron or non stick skillet. Form chicken mixture into large balls, flattening to make even patties

  • . Fry on both sides until golden brown and melty. Drain on paper towels. Serve warm or cold.
