Blend all ingredients together in a small bowl, until it forms a smooth dough. Freeze or refrigerate until firm enough to scoop into balls with a cookie scoop or two spoons.
You should end up with 13 to 15 balls, depending on your scoop size. Garnish with powdered sweetener or flaky sea salt if desired. Freeze 20 minutes before serving. Keep frozen until use.
