Keto Haystack Cookies

Here is a super simple NO BAKE recipe for Keto Haystack Cookies.  This is a keto take on a classic cookie recipe.  With only 5 ingredients, just combine and freeze and your done.

  • Using a large mixing bowl
  • Add Natural Peanut Butter, unsweetened cocoa powder and melted butter and combine well.
  • Add powdered Erythritol; and combine well into other ingredients.
  • Add your shredded unsweetened coconut and combine well into other ingredients.
  • Using a spoon, small ice cream scoop or a cookie scoop.  Evenly scoop out your mixture onto a parchment lined cookie sheet.  You should end up with 10 - 15 haystacks, depending on the size.
  • Place in freezer for 25 - 30 minutes.  Remove from freezer, the haystacks can be placed in a zip lock bag.
  • Enjoy!
