Keto Chicken Fajitas Casserole

Delicious, easy to make a great blend of Latin Mexican flavors. Easy to make with only 7 ingredients, recipe also versatile because the recipe could be made with steak, pork, shrimp etc.

Ingredients

  • 2 lbs chicken thighs 6 or 7 cubed, and cooked
  • 1 red pepper Medium size or pepper of choice
  • 1/2 Onion Medium or one small onion, sliced
  • 1 cup riced cauliflower (Optional)
  • 1/3 cup Fajita Seasoning Or you could subsitute with taco seasoning
  • 8 oz. Cream Cheese softened
  • 1/3 cup Sour Cream
  • 3 tbsp chicken broth to thin
  • 8 oz. Mexican blend cheese Shredded

Instructions

  • Bake at 350 degrees for 30 to 40 min. depending on oven temperature. Remove, and let stand 10 minutes before serving.
  • Prepare chicken, sauté pepper and onion in oil of choice, or butter, until lightly browned.
  • Add riced cauliflower, cook covered, to soften, adding broth as necessary to assist process.
  • Add cooked chicken. Stir in sour cream, cream cheese, and seasonings, combine thoroughly.
  • Add cheese, mix well.
  • Add your casserole filling into a Turn into an 11x9 inch baking dish. Smooth down your casserole.
  • Bake at 350 degrees for 30 to 40 min. depending on oven temperature.
