Creamy Cucumber Dill Salad
Servings 4 people
- 2 English cucumbers thinly sliced
- 1/4 cup red onion sliced (Optional)
- 7 oz. greek yogurt or *sour cream or mayo or combination
- 1 lemon juice and zest (or 1/4 cup white vinegar)
- 2 tablespoons dill chopped
- salt and pepper to taste To Taste
- 1 clove garlic chopped (optional)
Preparing Your Salad
In a separate bowl add lemon zest, finely chopped garlic and dill. Squeeze in your lemon juice.
Add your Full Fat Greek Yogurt or Sour Cream, and mix all ingredients well. This will make your cream salad dressing.
In a larger bowl place your thinly sliced cucumbers (we prefer English) and your and chopped red onion in a bowl and mix together.
Mix your creamy dressing in with your cucumber and onions and make sure your thoroughly coat your entire salad.
Add a teaspoon or so of sugar substitute for a hint of sweetness
Let the salad chill in the fridge for 30 minutes to let the flavours mingle.
*6 net carbs using the Greek Yogurt
*If you use Sour Cream or a Sour Cream Mayo mix the carb numbers will decrease.
*If you reduce the amount of red onions this would also reduce the number of carbs.
