Ingredients

Coconut Frosting Ingredients

  • 3 TB heavy cream
  • 1 TB natural sweetener I used sukrin gold
  • 1 TB toasted unsweetened coconut
  • 3 or 4 chopped pecans

  • In a small microwave safe bowl, heat the heavy cream and sweetener for one minute. Stir well, return to microwave for another minute and 15 seconds.

  • Remove carefully stirring well. Add toasted coconut and chopped pecans. Allow to cool while preparing cake.

Chocolate Mug Cake

  • Combine wet ingredients stirring well, add cocoa
    powder, natural sweetener, flour, and baking powder stirring and scraping sides of mug until a smooth batter is achieved. Let cool.


  • Microwave between 45-60 seconds, using least amount
    of time possible to prevent cake dryness.
