Cook cubed chicken in cast iron skillet or large frying pan until well cooked and browned.
Add taco seasoning. Incorporate well. Add water to scrap drippings from the bottom of the skillet. Add enchilada sauce stirring to mix. Stir in tomatoes. Remove from heat. Stir in cheese.
Bake in a 375° oven for 20 to 30 minutes until golden, broiling the top if desired.
Serve with sour cream and salsa. May also be served over lettuce, or with low carb tortillas.
