Keto Low Carb Coffee Cake In a Cup
This is a easy to make Keto/Low Carb friendly mug cake dessert. Mug cakes are a delicious way to satisfy your sweet tooth but also manage portion control.

Streusel Topping Instructions
Melt 2 TB butter in a microwave safe mug, bowl, or ramekin of 12 oz. or larger.
Mix in flour, sweetener, baking powder, and cinnamon until well combined. Add egg and extract. Stir until completely combined.
Microwave 45 seconds to one minute, depending upon microwave wattage.
Soften 1/2 tablespoon of butter....add cinnamon, flour and sweetener.
Mix in chopped nuts if desired... Crumble over warm mug coffee cake..Serve warm or cooled.
