Keto Taco Casserole

- 2 lbs ground beef we used beef
- 10 oz. riced cauliflower
- 1/2 cup water
- 3 cups cheddar cheese shredded
- 3 TB taco seasoning divided
- 1 cup sour cream
- 2 green onion diced
- 1/2 pint tomato diced fresh
- 2 TB cilantro diced
- 2.25 oz chopped black olive
- Shredded lettuce (To Taste)
Preheat oven to 350ºF
Pan fry the cauliflower rice in oil over medium/high heat until browned.Add seasoning.Transfer to 2qt casserole dish and spread in an even layer.
Brown ground beef over medium/high heat. Drain excess fat if necessary then add taco seasoning, and water. Stir and cook until liquid absorbs. Add chopped cilantro Transfer to casserole dish in an even layer on top of cauliflower rice.
Top with shredded cheese and bake for 10-15 minutes.
Spread sour cream over the top. Sprinkle with extra shredded cheese and preferred toppings.
