Italian Sausage soup
- 1 lb. Italian sausage hot or mild
- ¼ cup onion chopped
- 3 cloves fresh garlic crushed
- 4 cups chicken broth
- 8 oz softened cream cheese
- 1 zucchini small diced
- 14 oz can diced tomatoes
- 2 cups fresh spinach leaves
- 2 tsp oregano
- 2 tsp. Italian seasoning
- 1 tsp. fresh basil
- ¼ tsp crushed red pepper flakes
Cook your Italian sausage until browned. Add your chopped onion and garlic. Sauté briefly until soft
Add your herbs and seasoning. Pour in 3 cups of broth. Add diced zucchini. Cover and allow to simmer.
Add soft cream cheese to blender or food processer with remaining cup of chicken broth. Blend until combined.
Pour into the soup.
Add diced tomatoes and fresh spinach.
Allow soup to simmer 20 minutes or longer for flavors to combine.
Serve with grated parmesan cheese.
