Ingredients

  • Ingredients:
  • 1 1/2 lbs. green chilies fresh or canned
  • 6 oz. cotija cheese
  • 12 oz. sharp cheddar cheese
  • 4 large eggs beaten
  • 1 TB heavy whipping cream
  • Salt and pepper to taste

Instructions

  • Directions:
  • Preheat oven to 425 degrees
  • Grease a 9x13 inch baking dish
  • Line the bottom with a layer of green chilies. Cover chilies with half the cheeses.
  • Repeat the green chilies. Beat the eggs and cream. Pour over the casserole. Top with remaining cheese.
  • Bake at 425 for 35 to 40 minutes or until golden. Let rest 15 minutes.
