- Ingredients:
- 1 1/2 lbs. green chilies fresh or canned
- 6 oz. cotija cheese
- 12 oz. sharp cheddar cheese
- 4 large eggs beaten
- 1 TB heavy whipping cream
- Salt and pepper to taste
Directions:
Preheat oven to 425 degrees
Grease a 9x13 inch baking dish
Line the bottom with a layer of green chilies. Cover chilies with half the cheeses.
Repeat the green chilies. Beat the eggs and cream. Pour over the casserole. Top with remaining cheese.
Bake at 425 for 35 to 40 minutes or until golden. Let rest 15 minutes.
