Ingredients

  • 8 chicken thighs bone in
  • 1/2 onion small; diced
  • 1/2 green pepper diced
  • 8 oz mushrooms chopped
  • 3/4 cup dry red wine
  • 28 oz crushed tomatoes
  • 2 tsp thyme
  • 2 tsp basil
  • 3 cloves garlic
  • 1 tsp herbal seasoning 21 seasoning salute
  • 4 oz black olives
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • In a large heavy saucepan or stockpot, brown your chicken thighs on both sides. Transfer to a plate. Reserve the chicken drippings.
  • Add the peppers, onions, and mushrooms to the pan. Sauté briefly until translucent. Add garlic.
  • Add your herbs, seasoning, and wine. Cook 3 minutes
  • Add the tomatoes with their juice. Return the chicken to the pan. Cover. Heat to a simmer. Cook 30 minutes, or until the chicken is tender. Add olives...Serve warm.
