In a 9x13 inch baking dish, add chopped turkey, sauteed veggies and squash to dish. Set aside.
In a medium saucepan melt butter, add heavy cream. Bring to a simmer. Remove from heat. Add 5 ounces of cheese, stirring constantly until smooth. Add seasonings and fresh herbs.
Pour sauce over casserole ingredients, stir well until combined. Flatten and top with remaining cheese.
Bake for 30 minutes. Broil if desired for browning top. Let sit before serving.
