Ingredients

  • 1 lb breakfast sausage any kind
  • 8 eggs
  • 8 low carb tortillas taco size
  • 1 cup cheese shredded; any kind
  • 1/2 cup vegetables optional

Instructions

  • Spread sausage. evenly in a very thin layer over your tortilla all the way to the edges
    Heat a griddle, or non-stick skillet with oil. Place tortilla, meat side down. Allow to cook undisturbed for 3 minutes
    Flip tortilla. Warming meatless side for 30 seconds. Remove to a plate. Garnish with cheese, eggs, and other toppings of choice. Fold in half. Eat immediately.
