Keto Italian Sausage Soup

Ingredients

  • 1 lb Italian sausage cooked; regular or spicy
  • 1/4 onion diced
  • 1 clove garlic minced
  • 4 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1 zucchini squash diced
  • 1 15oz roasted tomatoes
  • 2 cups spinach fresh or frozen
  • 1 tsp Italian seasoning
  • 1 tsp pizza seasoning optional

Instructions

  • In a soup stockpot, or large sauce pan, brown Italian sausage.
  • Add in chopped onion and sauté briefly. Add in grated Parmesan to coat the meat and onion.
  • Add chicken broth. Bring to a low simmer. Add in seasoning and veggies.
  • Simmer 20 to 30 minutes, or until veggies are tender. Add in heavy cream and simmer 5 more minutes.
  • Serve immediately, Top with freshly grated parmesan vheese if desired.
