Keto Taco Bites

1 lb. ground beef or chicken, pork 1 cup cheese shredded; divided 2 tsp taco seasoning homemade(see blog for recipe) 2 oz cream cheese softened 2 TB Grated Parmesan Cheese 1 egg 1 cup almond flour 1 tsp baking powder
Brown ground beef. Drain well, and season with homemade taco seasoning.
Preheat oven to 400 degrees. Line baking tray with parchment or silicone mat.
In a medium microwave safe bowl, briefly heat 1/4 cup of the shredded cheese, cream cheese, and parmesan cheese. Stir well.
Add ground beef, egg, almond flour and baking powder. Mix well. Add cheese. Mix again.
Using a cookie scoop or a spoon, form mixture into 1 1/2 inch balls. Place on prepared baking tray. Bake 20 minutes. Allow to cool. Serve with salsa, or favorite Mexican sauces if desired.
