Keto Taco Tuesday Casserole

Ingredients

  • 2 lb ground beef cooked; seasoned
  • 10 oz riced cauliflower cooked; drained
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 can black soybeans drained; rinsed
  • 3 cups cheese shredded

Cold Toppings:

  • 1 cup sour cream
  • 2 green onions diced
  • 1 tomato diced
  • 2 TB cilantro chopped

Instructions

  • Preheat oven to 350 degrees
  • Brown and season ground beef. Cook riced cauliflower. Drain well. Heat in dry pan until slightly toasted. Season with cumin and chili powder.
  • Combine beef, cauliflower and beans. Pour into 9x13 inch baking dish. Stir in cheese. Press down. Bake for 20 minutes or until heated through and bubbly. Let cool.

Cold toppings Assembly:

  • Spread sour cream across slightly cooled casserole. Sprinkle additional toppings evenly over casserole. Serve immediately.
