As much as I love all things taco, I don’t always have the time to prepare everything.
That’s why I love this dish.
It’s as easy as cooking the beef and layering it up with simple ingredients.

How Did Taco Tuesday Start?
Taco Tuesday has an interesting history. You may think that it’s always been around. The true origin is unknown, but the term was first trademarked in New Jersey in 1982. Since then, the term has become widely popular. NBA player Lebron James even tried to trademark Taco Tuesday in 2019, though he was not successful. Tacos, especially in casserole form, is a staple at our house. There’s no denying that tacos make everyone happy, so why not celebrate Tuesdays with us? Make Taco Tuesday a tradition for you and your family to enjoy for years to come!

Keto Taco Tuesday Casserole
Ingredients
- 2 lb ground beef cooked; seasoned
- 10 oz riced cauliflower cooked; drained
- 2 tsp cumin
- 1 tsp chili powder
- 1 can black soybeans drained; rinsed
- 3 cups cheese shredded
Cold Toppings:
- 1 cup sour cream
- 2 green onions diced
- 1 tomato diced
- 2 TB cilantro chopped
Instructions
- Preheat oven to 350 degrees
- Brown and season ground beef. Cook riced cauliflower. Drain well. Heat in dry pan until slightly toasted. Season with cumin and chili powder.
- Combine beef, cauliflower and beans. Pour into 9x13 inch baking dish. Stir in cheese. Press down. Bake for 20 minutes or until heated through and bubbly. Let cool.
Cold toppings Assembly:
- Spread sour cream across slightly cooled casserole. Sprinkle additional toppings evenly over casserole. Serve immediately.
