Keto Air fryer Mozzarella Stuffed Meatballs
Come summer, the last thing you want to be doing is stressing about dinner.
We know that summer can be just as busy as the school year, with various camps, activities and events crowding your calendar.
And who wants to turn on the oven when the sun is still blazing?
That’s why I decided to do an air fryer series… As a helpful idea for those struggling with the heat, but still need to get dinner on the table.
For crispy-on-the-outside, tender-on-the-inside meatballs, turn to the air fryer.
It will replicate the crust you get when you pan fry—without any oil.
Another bonus: You aren’t required to stand near a splattering stove to turn the meatballs every couple of minutes while the temperatures are rising!
The air fryer does the work for you and gets all sides perfectly “seared”.
These are stuffed with mozzarella for an extra-fun surprise.
NOTE:
These could easily be made carnivore by omitting the parsley, and using all pork panko, and no almond flour!

Keto Air Fryer Mozzarella Stuffed Meatballs
Equipment
Ingredients
- 1 lb ground beef or other ground meat
- 1/4 cup pork panko ground pork rinds
- 1/2 cup almond flour use all rinds for carnivore option
- 1/2 cup grated parmesan
- 1/4 cup chopped fresh parsley omit for carnivore
- 3 cloves garlic minced
- 2 tsp Italian seasoning
- 1 TB Johnny's garlic spread powder
- 3 oz mozzarella cheese fresh; cubed
Instructions
- Preheat Air fryer.
- In a large bowl combine all ingredients except mozzarella.
- Scoop 2 TB of meat mixture into your hand. Flatten into a patty on your hand.
- Place a cube of cheese in the center. Enclose it in meat and rool to form a ball. Mixture should make 16 meatballs.
- Place meatballs in basket of air fryer. Cook at 370 degrees for 12 minutes, or until meat thermometer reads 165 degrees.
- serve with marinara sauce, and additional parmesan, if desired.
