Mock Apple Crisp | Keto Picnic Collab | Keto Low Carb

Our entry for the Collab is this Mock Apple Crisp. You will not believe these aren’t apples, but they aren’t no apples were harmed in the making of this dish. Enjoy!

Ingredients
FILLING:
- 6 cups zucchini peeled and sliced
- 3 tablespoons lemon juice
- 2/3 cup erythritol monk fruit blend or a Sugar Free Sweetener of your choice.
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/2 TB apple cider vinegar
TOPPING:
- 1/2 cup pecans chopped
- 1/2 cup almond flour
- 1/4 cup flaxseed powder
- 1/4 cup erythritol
- 1 teaspoon cinnamon
- 1/4 cup butter
Instructions

In medium bowl, combine zucchini, lemon juice, sweetener, cinnamon and nutmeg until well blended. Pour mixture into a greased 9 x 9-in. baking dish.

For topping, combine pecans, almond flour, oat fiber, sweetener and cinnamon in a bowl then cut in butter until crumbly. Sprinkle over the zucchini mixture.

Bake at 350 F for 45-50 minutes or until zucchini is tender. Broil the top for extra crunch.

We Just used regular zucchini don’t forget to scrap out the seeds from larger ones.
Hi, Thanks for the recipe. I do have two questions. Under the topping instructions it says to add oat fiber, your video nor the ingredients list oat fiber. How much oat fiber should be used? The second question, the recipe says to use a 9×9 baking dish, the video says 13×9 which one is correct? Again thank you for all your videos and recipes.
Hi Mac sorry for the delay in responding. The oat fiber is optional and we used 9 x 13 probably because it’s what we had. This is a older recipe and sounds like we need to update the recipe to jive with the video.
