Keto Air Fryer Mozzarella Stuffed Meatballs

- 1 lb ground beef or other ground meat
- 1/4 cup pork panko ground pork rinds
- 1/2 cup almond flour use all rinds for carnivore option
- 1/2 cup grated parmesan
- 1/4 cup chopped fresh parsley omit for carnivore
- 3 cloves garlic minced
- 2 tsp Italian seasoning
- 1 TB Johnny's garlic spread powder
- 3 oz mozzarella cheese fresh; cubed
Preheat Air fryer.
In a large bowl combine all ingredients except mozzarella.
Scoop 2 TB of meat mixture into your hand. Flatten into a patty on your hand.
Place a cube of cheese in the center. Enclose it in meat and rool to form a ball. Mixture should make 16 meatballs.
Place meatballs in basket of air fryer. Cook at 370 degrees for 12 minutes, or until meat thermometer reads 165 degrees.
serve with marinara sauce, and additional parmesan, if desired.
