Low Carb Keto Cabbage Roll Casserole

This is a delicious Low Carb Keto friendly casserole that the entire family will enjoy.  Easy to assemble, with minimal ingredients, great for meal prep or a week night dinner.  This would also be a great choice for a St. Patrick's Day dish.

Ingredients

  • 2 pounds ground beef
  • 2 tbsp onion chopped
  • 15 oz Tomato Sauce 15 ounces each tomato sauce, divided
  • 1 tsp paprika or similar
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 cup apple cider vinegar
  • 2 tsp low sugar ketchup 2 Squirts
  • 4 bacon strips cooked and crumbled
  • 15 ounces cabbage 15 oz, shredded/ or bagged
  • 1 cup shredded part-skim mozzarella cheese

Instructions

  • Preheat oven to 375°.  

In a large skillet, cook beef over medium heat, crumbling beef, until meat is no longer pink. Drain....add heated bacon and onion.

  • Stir in one can of tomato sauce and seasonings. 
  • In a 9x13 inch greased casserole dish, place half of your cabbage....layer half of your meat mixture evenly over the top of cabbage layer....
  • next more cabbage, then the rest of the meat mixture.

Sweet and Sour Sauce

  • In a separate sauce pan, combine remaining tomato sauce with apple cider, vinegar, and 2 squirts of "NO SUGAR ADDED"  ketchup.  Combine ingredients together and mix well.
  • Pour your sweet and sauce evenly over your casserole.  
  • Cover your dish with foil and bake for 40 minutes in a 375 degree oven.
  • After 40 minutes remove from oven and uncover.  Top with 1 cup mozzarella cheese.  Bake for an additional 10 minutes uncovered.
  • For a browned top, broil for 1 - 2 minutes (watch closely!)
  • Remove from oven and let rest for 15 minutes.
  • Serve and enjoy!
