This is a delicious Low Carb Keto friendly casserole that the entire family will enjoy. Easy to assemble, with minimal ingredients, great for meal prep or a week night dinner. This would also be a great choice for a St. Patrick's Day dish.
In a large skillet, cook beef over medium heat, crumbling beef, until meat is no longer pink. Drain....add heated bacon and onion.
Stir in one can of tomato sauce and seasonings.
In a 9x13 inch greased casserole dish, place half of your cabbage....layer half of your meat mixture evenly over the top of cabbage layer....
next more cabbage, then the rest of the meat mixture.
Sweet and Sour Sauce
In a separate sauce pan, combine remaining tomato sauce with apple cider, vinegar, and 2 squirts of "NO SUGAR ADDED" ketchup. Combine ingredients together and mix well.
Pour your sweet and sauce evenly over your casserole.
Cover your dish with foil and bake for 40 minutes in a 375 degree oven.
After 40 minutes remove from oven and uncover. Top with 1 cup mozzarella cheese. Bake for an additional 10 minutes uncovered.
For a browned top, broil for 1 - 2 minutes (watch closely!)
Remove from oven and let rest for 15 minutes.
