This weeks recipe is Keto Creamy Chicken and Green Bean Casserole!  This is another home run by my beautiful wife Sarah, this is up in the my top 5 Keto casseroles from our channel and we have a lot of casserole recipes.  This is a perfect and easy to make Keto take on the classic green bean casserole that is popular during the holidays but definitely not keto or low carb friendly.  This is one of those easy to make weeknight family friendly keto recipes that the entire family will enjoy!

Ingredients

  • 2 1/2 lbs. chicken cooked and shredded
  • 15 oz. green beans canned
  • 16 oz cream cheese softened
  • 1 cup heavy cream
  • 1 cup water
  • 8 oz cheese Shredded. I used Parmesan and mozzarella
  • 2 tbsp Chopped fresh herbs 2 TB
  • 1/2 cup bacon crumbles 8 slices
  • 1 cup pork rinds crushed
  • Seasonings to taste

Instructions

  • Preheat oven to 375°
  • In a large bowl combine shredded cooked chicken and green beans. Set aside. Warm bacon in it’s own drippings, add crushed pork rinds.
  • Set aside.
  • In a medium saucepan place softened cream cheese and heavy cream. Heat on medium high heat watching constantly. Whisk in water. Add 1/2 cup of your 8 oz of shredded cheese. Remove from heat and add herbs and seasonings of choice.
  • Pour white sauce over chicken and beans stirring well. Add remaining cheese. Combine thoroughly. Place mixture in 9x13 baking dish. Sprinkle with reserved bacon/rind crumble. Bake 30 minutes. Let stand 15 minutes before serving.
