Keto Creamy Chicken Green Bean Casserole
This weeks recipe is Keto Creamy Chicken and Green Bean Casserole! This is another home run by my beautiful wife Sarah, this is up in the my top 5 Keto casseroles from our channel and we have a lot of casserole recipes. This is a perfect and easy to make Keto take on the classic green bean casserole that is popular during the holidays but definitely not keto or low carb friendly. This is one of those easy to make weeknight family friendly keto recipes that the entire family will enjoy!
Blend, layer, and bake… It’s as easy as that to make this quick supper solution, thanks to easy Alfredo sauce, pre-cooked rotisserie chicken… And pantry friendly canned beans. As we discussed in our latest keto conversation, this lifestyle does not need to be stressful. Making a delicious family- style dinner out of a pre-cooked chicken, and pantry staples leaves you feeling more Zen-like, and also full.
This is one of the best savory casseroles, similar to both traditional green bean casserole served at holiday dinners and parties, and our leftovers casserole, but with chicken, green beans and a creamy Alfredo sauce. It’s a hodgepodge of lots of ingredients that make for a tasty dinner.
Casserole dishes are some of our very favorites for dinner. The creamy chicken and green bean casserole is a family favorite. We feel like you get a little bit of everything with the chicken the beans and of course BACON. We also love that it’s very simple. There are very few steps needed to prep the chicken, and prepare the simple sauce. But they’re easy and the result is a very flavorful, hearty casserole perfect to enjoy all year long.
This recipe idea originally came from a taste of home recipe… But condensed soup was used, which we know is not low-carb friendly, so instead I have used a simple Alfredo sauce utilizing full fat heavy cream and cream cheese.
Traditional green bean casseroles are generally chopped with some kind of crispy fried onions, or some type of bread stuffing… To mimic this idea I decided to use some crushed pork rinds, a nice crispy bacon and a bit of fresh herbs. If you do not care for bacon,or it is a dietary restriction for you, you could always mimic the breadcrumb texture with a little bit of grated Parmesan cheese and some almond flour.
Can I use frozen green beans?
You can definitely use frozen green beans. Be sure to still trim them to bite-size pieces, or you can buy a frozen package where the beans have already been cut. Also you may want to pre-cook them a few minutes to get them to the softened state that canned green beans already have. I opted to use canned green beans, For two reasons… One, I am trying to rotate and use up pantry items that we seem to be collecting during this difficult pandemic time. And secondly, I simply love canned green beans. I think it must harken back to my elementary school days, this was pre-food pyramid time, so all of our school lunch meals were full of fat flavor and of course butter. LOL.
I’m also utilizing a pre-cooked rotisserie chicken here. I happen to love the flavor and the cost effectiveness that this provides our family. If you do not care for this style of chicken, or you are not nearby a store that provides this service, you can absolutely use fresh chicken of any kind as long as it’s cooked.
Fresh herbs:
I adore fresh herbs. I feel like a simple casserole is elevated to another level, just by taking advantage of the herbaceous goodness that simple herbs assist in bringing out in our choice of meat and veggies. I happened to use rosemary and thyme, I feel like they complement chicken very well… But you could use simple parsley, tarragon(if you enjoy licorice flavors) or sage, for a change of pace. if you are fortunate enough to have a flourishing garden at this time, this will be a perfect time to incorporate some of the fruitage of your hard work.

So I’m fortunate enough to always get to try and experience new keto/low carb dishes. At CjsKetoKitchen we have made a lot of Keto Casserole recipes–I mean a lot. We love casseroles because they are easy to make, and generally can feed a family for 2 to 3 days (depending on the size of he family). We try and make recipes that are truly family friendly, the idea being that if you’re doing keto solo these dishes will allow you to make one dish and the entire family will probably enjoy, thus saving you time, money and also allowing you to have variety on your keto journey. We want you in this for the long term (we are and love it!) I think this is in my top five list of casseroles. Yes, it’s that good! I love the alfredo sauce, it was very rich and creamy. As with most casseroles, it was actually better the next day, I didn’t even need to add salt. I also really enjoyed the topping which was a combination of crushed pork rinds and bacon crumbles, so it was absolutely fabulous. Ingredients
- 2 1/2 lbs. chicken cooked and shredded
- 15 oz. green beans canned
- 16 oz cream cheese softened
- 1 cup heavy cream
- 1 cup water
- 8 oz cheese Shredded. I used Parmesan and mozzarella
- 2 tbsp Chopped fresh herbs 2 TB
- 1/2 cup bacon crumbles 8 slices
- 1 cup pork rinds crushed
- Seasonings to taste
Instructions
- Preheat oven to 375°
- In a large bowl combine shredded cooked chicken and green beans. Set aside. Warm bacon in it’s own drippings, add crushed pork rinds.
- Set aside.
- In a medium saucepan place softened cream cheese and heavy cream. Heat on medium high heat watching constantly. Whisk in water. Add 1/2 cup of your 8 oz of shredded cheese. Remove from heat and add herbs and seasonings of choice.
- Pour white sauce over chicken and beans stirring well. Add remaining cheese. Combine thoroughly. Place mixture in 9x13 baking dish. Sprinkle with reserved bacon/rind crumble. Bake 30 minutes. Let stand 15 minutes before serving.
