The Ultimate 5-Minute Low Carb Coleslaw
Ingredients
- 4 cups shredded cabbage or coleslaw mix
- 1/2 cup blue cheese dressing or ranch
- 1/2 cup mayonnaise
- 2 tsp dijon mustard
- 2 TB apple cider vinegar
- 2 TB dill pickle juice
- 1 squirt splenda liquid sweetener
- 1 tsp dill pickle seasoning optional
- 1/2 tsp celery seed
- 1 tsp salt & pepper
Instructions
- In a large mixing bowl measure out 4 cups cabbage.
- In a separate mixing bowl, combine the mayo, dressing, vinegar, pickle juice, mustard and sweetener. whisk to combine.
- Add in seasonings to taste. Whisk until the dressing is smooth.
- Add the dressing to the cabbage. Using tongs or a large spoon, toss everything together until all the cabbage is coated.
- While you can eat it immediately, letting it sit at least 30 minutes allows the flavors to meld.
