Cheesecake stuffed strawberries are the perfect no bake treat! Juicy strawberries stuffed with delicious cheesecake filling are the ultimate indulgence. We drizzled ours with chocolate to take them to a whole new level.
The concept for these no bake cheesecake strawberries is super simple. You start with large juicy beautiful strawberries… Which are just starting to come into season here in early spring. I like to slice the bottom off of the strawberries so that they stand up better.
The cheesecake filling is very simple with cream cheese confectioners sweetener and a little bit of vanilla extract(almond would be equally delicious here). Then you just pipe the filling right into each strawberry and drizzle with your favorite flavor of chocolate.
This is a delicious treat perfect for spring and summer, and after your Easter celebration and really perfect for just about any occasion.
If you don’t have a piping bag, just use a plastic bag and spoon the filling into it then cut the tip and squeeze the filling into each strawberry. I actually prefer this over a piping bag because it’s disposable.
These also make a beautiful treat for showers and weddings and I’ve actually made these for over twenty years, long before keto, for just such occasions.
Ingredients And Tips:
The most important ingredient you will need is the strawberries. Because they are the star of the recipe, so to speak, pick bright red, healthy looking strawberries that are of adequate size.
Cream cheese adds a mild sweet and tangy flavor and a smooth creamy feeling to the strawberries.
using confectioners natural sweetener here is going to provide you with the creamiest filling with easy blend ability.
chose the finest you can afford for the best baking results.
Any flavor of chocolate chip will work here depending on your preference. We really enjoy the choc zero chips. We did some with white chocolate, and also used their chocolate syrup which was equally delicious.
Place in an airtight container for up to three days in the refrigerator. If you were making these ahead of time it’s best to reserve the chocolate drizzle till just before serving.

This strawberry dessert was a nice refreshing treat. I like to call the Strawberry Volcano’s! If I didn’t know better, I wouldn’t know these were keto friendly and your friends and family wont either. They held up very well, just like most strawberries over time they got a bit juicy and softer but that is the nature of fruit. Strawberries are very keto and low carb friendly. - Beat softened cream cheese and powdered natural sweetener in a small bowl, add heavy cream to thin if desired. Add vanilla extract. Beat briefly until smooth. Spoon into a plastic bag fitted with a piping tip. Snip end, and fill cavities of cored berries. Drizzle with chocolate syrup or melted chips if desired.
