This weeks recipe is Keto Coffee Cake in a Cup.  This is a easy to make Keto/Low Carb friendly mug cake dessert.  Mug cakes are a delicious way to satisfy your sweet tooth but also manage portion control.  We have several other mug cake recipes on our channel and these are nice recipes to have in your keto arsenal recipes.

So as I edit the recipe video, when it’s all done it will look like this is a very easy dish dessert, but in the background I know how hard Sarah worked to perfect this recipe, I had to eat several failed versions of this recipe.

Easy to make Keto Coffee Cake In a Cup

Are you looking for a warm, cinnamon-sugary treat that will satisfy any sweet tooth? Look no further…. this easy mug cake is for you.

This mug cake is moist, tender cake, spiced with cinnamon and layered with cinnamon sugar… Then when it’s finished baking it gets a fantastic streusel crumb topping. Sweet tooth busting for sure!

I’m not sure who the genius was that coined the term “coffee cake“…But according to Wikipedia, in the United States a coffee cake is generally something that is a sweet cake intended to be eaten with coffee or tea… The American variety is usually a single layer flavored with cinnamon. Although cakes like this have been made by a number of other countries including Germany where their variety of crumb cake(Streuselkuchen) is extremely popular.

Few things are as nice as a warm piece of soft and delicious coffee cake with a crunchy streusel topping… And I love that with the ease of mug cakes you don’t have to wait very long to taste it.

This makes a wonderful after dinner treat… But it would also be the perfect cake for Sunday morning reading the paper( do people even do that anymore? LOL) and it would be serious competition for our low-carb pancakes.

So microwave mug cakes might not be the same as real cakes… But they are awesome in a different way. You can make them fast enough to satisfy your treat craving without an oven, and eat them in their entirety without feeling comatose afterwards.

Here are a few important tips:

  • Your container needs to be microwave safe and large enough. I’ve found at least 12oz.
  • start with the shortest cook time your recipe lists first. Check the cake by carefully touching the top. It should be firm and springy, not at all doughy. If it’s not done, keep cooking it in 10 second bursts.
  • Sinking happens. Mug cakes often deflate a little bit. They still taste delicious and there’s no need to be discouraged… Filling it up more than halfway won’t help, and you will also avoid overflow in the baking process.

And lastly, can you make a “mug cake” in an oven? Of course, although that negates the whole speed thing. Generally, 25 minutes at 350° does the trick in either conventional oven or toaster oven.

So I’m fortunate enough to always get to try and experience new keto/low carb dishes.    This recipe really does capture the texture and taste of a traditional coffee cake, and of course it’s great with a cup of coffee.  This recipe actually was a bit of a challenge to make, and there were several versions of the recipe.  This started from a non-keto recipe with no egg, however it just wasn’t working out.  Sarah had to think through this and how to make it perfect and repeatable for our audience.  The final version turned out great! Honestly as the taste tester there was nothing wrong with the previous versions, they all tasted good just like coffee cake.  In the photo below here is a version without the crumbled topping, this version has a syrup poured over it and topped with chopped walnuts.  It was good but it lacked zing or something, hard to explain.

MY EXPERIENCE WITH MUG CAKES:

Sometimes mug cakes can have a slight “eggy” taste.  However, I’ve found that as these sit and cool that eggyness goes away.  I think this is because mug cakes are generally cooked in the microwave and microwaves cook things from inside out versus outside in.  It was interesting that while doing the taste test how the flavor changed as it cooled.  Mug cakes have also become popular outside of the Keto Low Carb world and lots of major baking companies have mug cakes recipes on the shelves.  Again these are easy to make and great for portion control.

Mug Cake

  • Melt 2 TB butter in a microwave safe mug, bowl, or ramekin of 12 oz. or larger.
  • Mix in flour, sweetener, baking powder, and cinnamon until well combined. Add egg and extract. Stir until completely combined.
  • Microwave 45 seconds to one minute, depending upon microwave wattage.

Streusel Topping

  • Soften 1/2 tablespoon of butter....add cinnamon, flour and sweetener.
  • Mix in chopped nuts if desired... Crumble over warm mug coffee cake..Serve warm or cooled.
  • Enjoy
