Delicious and easy to make Keto Low Carb Pecan Pie Mug Cake

This weeks recipe is Keto Low Carb Pecan Pie Mug Cake.  Fall is officially here and in the Pacific Northwest we are actually expecting unseasonable cold weather soon–down in the 30’s which is very unusual even for us.  The rain has returned and life marches on, as we prepare for the upcoming holidays.  Halloween stuff is everywhere, and Christmas decoration is even displayed at some stores…time has flown by!  This recipe is simple to make, and serves up two mug cakes.  We think what makes this is cake is the Sugar-free Caramel flavoring; we used Torani but any sugar-free brand would work.  We hope you enjoy this recipe.

So, pecans….especially my butter roasted pecans, happen to be one of my very favorite foods of life.

I thought this would be the perfect opportunity to take all that is delicious about pecan pie and transform it into a delicious and easy cake.

If you love pecan pie, you’ll go crazy for this easy pecan pie mug cake! this mug cake can be thrown together in no time and it will satisfy your sweet tooth without destroying your goals.

This pecan pie mug cake tastes just like pecan pie, but in cake form. I think it tastes even better than pecan pie. Plus, it’s ever so much easier to make and portion-controlled to boot!

Pecan mug cake is very rich, and sweet, and served warm with a dollop of whipped cream…..it would be an easy dessert to make for thanksgiving….just like pecan pie without the crust.

So a couple of tips….natural brown sugar substitute really shines in this dish, and I highly recommend getting your hands on some.

The other thing that stands out for me is the use of caramel syrup….drizzling with this caramel flavored butter infusion, brings depth of flavor, and supreme moisture, that can sometimes be lacking in traditional low-carb mug cakes. While we did not try maple syrup, it could also be used here in a similar fashion, and the keto site ruled me has an excellent version using those maple flavors!
