This weeks recipe is a Chicken Jalapeno Poppers Casserole this is a Keto and low Carb friendly dish.  This is a really delicious casserole with just enough spice to give it another level of flavor.  It will really will remind you of those delicious jalapeno poppers but without all of the carbs.

All of the delicious flavors of cream cheese jalapeño poppers are stuffed into this jalapeño popper chicken casserole recipe to make a quick, easy, and over the top tasty dinner. You will find tender chicken layered with cream cheese and topped with fresh jalapeño peppers and rich cheddar cheese and finished off with a perfect amount of crispy bacon. If you love jalapeño poppers as an appetizer you’re going to be crazy about this easy dinner recipe. Not only is it extremely delicious, but it’s also low-carb and keto friendly.

I bet you can agree that casseroles are always a good idea… At least I think so LOL. You’re going to love how easy this one is with very little prep time, and only seven ingredients.

Jalapeño poppers, are jalapeño peppers that have been hollowed out, stuffed with a mixture of cheese, and sometimes meat they are usually breaded and deep-fried. They have their origins in Texas at around 1972… They can be fairly similar to a chili relleno.

They really became super popular in the rest of the United States in the early 90s… That’s when I first tried one on my first ever trip to Washington state from southern Idaho.

Although this casserole is not breaded… There’s plenty of creamy cheese sauce here with lots of flavor, and loads of bacon, because bacon makes everything taste delicious!

I am a big fan of spicy food… I like a little kick in my mouth… But I don’t like having my mouth hurt. Definitely choose peppers that you and your family enjoy. Cooked jalapeños are milder than raw jalapeños… We used pickled, because I like the zing of vinegar, and the convenience of an already softened product (and C.J. picked up the wrong ones).

However you make it it is sure to become a weeknight favorite in your home when you need something easy that the whole family will enjoy.
I utilized a rotisserie chicken in this recipe. Chicken casseroles for me are an easy satisfying way to stay keto  and still make a one dish dinner. It’s flavor lends itself well to a variety of casseroles and most people enjoy chicken. If you prefer to use chicken breast or thighs, you definitely could.

We ate off of this casserole two days, and it only got better with time, as most casseroles do.

This recipe was surprisingly delicious!   I say surprising because I was concerned about the use of the liberal use of jalapeno peppers that Sarah used while preparing the dish.  I actually enjoy spicy food and during my taste test right after the casserole cooled, the peppers seemed to be really spicy.  But after continuing to taste the dish I realized that this was really deliciou and the spice was a nice addition to the casseroles overall flavor.  I had two servings it was so good!

The next day we had this for dinner, and as with most casseroles it was better the second day.  The peppers seem to mellow out even more.  We used a pickled jalapeno in our casserole, mainly because Sarah sent me to the store and I didn’t really understand what she wanted.  You The peppers we had weren’t supper spicy, but everyone’s tolerance for spicy is different, if you have young kids who may not like the peppers you could easily substitute the jalapeno’s for a milder flavored pepper, or omit them all together.  The bacon really made the dish pop as well, we always keep a bag of bacon crumbles in our refrigerator– in fact I had to make a special run to Costco to get a couple of backs. Keep in mind we made this recipe at the height of the COVID-19 outbreak, so I felt fortunate to even find the bacon crumbles at Costco.  The crumbles make things so much easier than preparing slices of bacon. Ingredients

  • 2 lbs chicken shredded and cooked (we started with a Rotisserie Chicken)
  • 1/2 tsp garlic powder
  • 8 oz cream cheese softened
  • 1/2 cup heavy cream
  • 1/4 cup chicken stock
  • 12 oz. jalapeños jar pickled or peppers of choice
  • 4 oz cheese grated cheese of choice
  • 1/2 teaspoon paprika
  • 1/2 cup crumbled bacon 8-10 cooked slices of bacon

Instructions

  • DIRECTIONS
  • Preheat your oven to 375˚F
  • Lay shredded cooked chicken in a casserole dish. Season with garlic powder, paprika, and pepper, or seasonings of your choice.
  • Whisk together heavy cream, cream cheese, and chicken stock. Spread the mixture evenly over shredded chicken.
  • sprinkle jalapeño peppers on the cream cheese layer. NOTE: Remove the seeds and stems if you want it milder, or leave some if you want more spicy.
  • Sprinkle the cheddar cheese on top. Garnish with the bacon.
  • Garnish with the bacon crumbles
  • Bake the chicken casserole for 20 minutes or until bubbly and hot.
  • Remove from oven. Let rest and settle for 15 minutes.
  • Enjoy!

    I made this casserole, as directed, tonight. As usual for your recipes, this was outstanding. I just want to thank you and CJ for all you do for the keto community. I so appreciate it. I know when I try one of your recipes that it will be good and please this family. BTW, I loved your cookies too. I have to make another batch. (The ones with the Lily’s chocolate chips, coconut flakes, pecans, egg yolks, and sweetener). Hugs to you both.
