Sear chicken on both sides in an oven-proof skillet.
In a large skillet re-warm bacon crumbles. Add 1 cup of mushrooms and sauté until tender. Remove bacon and mushrooms and set aside.
Combine together mayonnaise, mustard and alternative sweetener to form a sauce. Pour sauce over chicken thighs in the pan. Top with reserved mushrooms and bacon. Sprinkle cheese even over the dish.
Bake at 350° for 30 minutes. Broiling for 1 to 2 minutes if desired. Let dish sit for 10 to 15 minutes before serving. Serves 8
