Keto Bacon Vinaigrette
A classic steakhouse favorite. Savory bacon and tangy mustard make this dressing a winner for even salad haters.

- 3 slices bacon cooked; chopped
- 1 green onion chopped
- 1/4 cup olive oil
- 1/4 cup bacon drippings
- 1/4 cup red wine vinegar or apple cider vinegar
- 1.5 tsp stone ground mustard or mustard of choice
- 1 tsp natural sweetener
- 1 tsp salt
- 1 tsp pepper
Chop the bacon into small pieces. Cook until crispy. Drain the drippings into your measuring cup. Set bacon aside.
Add olive oil to food processor or bowl. Add dripping, onion, mustard, vinegar, sweetener, and seasonings
Blend until emulsified. Add in half the chopped cooked bacon. Blend again.
Serve warm or salad or other veggies. Refrigerate. Re-warm for serving.
