Keto Chicken Lettuce Wraps~Two Ways

Ingredients

Chicken Salad Wrap:

  • 4 romaine lettuce leaves or similar lettuce
  • 3 oz cooked diced chicken or meat substitute
  • 1 TB mayonnaise
  • 1 tsp mustard optional
  • 1 stalk celery diced
  • 1 green onion sliced
  • 1 tsp salt & pepper

Thai Chicken Wraps:

  • 4 romaine lettuce leaves or similar
  • 3 oz cooked diced chicken or meatless alternative
  • 1/4 cup diced red pepper
  • 1/4 cup diced English cucumber
  • 1 green onion sliced
  • 1/2 cup peanut butter
  • 2 TB soy sauce
  • 1 TB rice vinegar
  • 2 TB brown natural sweetener
  • 2 tsp chili paste optional
  • 3 cloves garlic
  • 1 TB fresh ginger
  • 1 lime squeezed for juice
  • 3 TB water as needed to thin sauce

Instructions

Chicken Salad Wrap Instructions:

  • In a small bowl, combine all ingredients well.
  • Scoop evenly into 4 lettuce leaves. Serve immediately or chill.

Thai Chicken Wrap Instructions:

  • In a small bowl combine chicken and veggies.
  • In a separate bowl, combine peanut butter, soy, vinegar, sweetener, garlic, ginger, and chili paste. Whisk to combine. Add water as needed to thin sauce.
  • Add desired sauce amount to chicken and veggies. Stir well to combine.
  • Scoop into 4 romaine leaves for serving.
