Every time I make  lettuce wraps I remind myself how incredibly delicious they are!


The filling is full of vegetables, protein and a perfect sauce that will leave everyone at the table feeling satisfied.


The best part, you can load your plate with seconds, and even thirds, because they’re really healthy and guilt free.

We all know the term “quick and easy”. Well, I give you “quick and healthy!”.


I know a lot of us do our best to eat healthy keto when we can, and while the thought of preparation can be daunting and time consuming, these fast and simple feel good recipes do exist! Super tasty and low carb here we come!


A lot of folks are facing down weeks and weeks (let’s be honest, it’s months) of 90+ degree temperatures, not around here, of course. We’re lucky if we get 6 weeks of warmth!

Some people don’t enjoy spice of any kind, so I decided to make wraps two ways. One is classic deli-style chicken salad. Old school and fresh. The second, kicks it up a notch with zesty Thai flavors to satisfy your take out craving fast!

Keto Chicken Lettuce Wraps~Two Ways

Chicken Salad Wrap:

  • 4 romaine lettuce leaves or similar lettuce
  • 3 oz cooked diced chicken or meat substitute
  • 1 TB mayonnaise
  • 1 tsp mustard optional
  • 1 stalk celery diced
  • 1 green onion sliced
  • 1 tsp salt & pepper

Thai Chicken Wraps:

  • 4 romaine lettuce leaves or similar
  • 3 oz cooked diced chicken or meatless alternative
  • 1/4 cup diced red pepper
  • 1/4 cup diced English cucumber
  • 1 green onion sliced
  • 1/2 cup peanut butter
  • 2 TB soy sauce
  • 1 TB rice vinegar
  • 2 TB brown natural sweetener
  • 2 tsp chili paste optional
  • 3 cloves garlic
  • 1 TB fresh ginger
  • 1 lime squeezed for juice
  • 3 TB water as needed to thin sauce


Chicken Salad Wrap Instructions:

  • In a small bowl, combine all ingredients well.
  • Scoop evenly into 4 lettuce leaves. Serve immediately or chill.

Thai Chicken Wrap Instructions:

  • In a small bowl combine chicken and veggies.
  • In a separate bowl, combine peanut butter, soy, vinegar, sweetener, garlic, ginger, and chili paste. Whisk to combine. Add water as needed to thin sauce.
  • Add desired sauce amount to chicken and veggies. Stir well to combine.
  • Scoop into 4 romaine leaves for serving.
