Ingredients

  • 4 cups chicken cooked, finely diced
  • 1 cup pork rinds smashed
  • 2 eggs
  • 1 TB heavy cream
  • 1/2 cup parmesan cheese grated
  • 2 TB Italian seasoning

Instructions

  • In a medium bowl, mix all ingredients together, combining well.
  • Shape chicken mixture into patties, about 1/4 cup to 1/3 cup size.
  • In a cast iron skillet, or non-stick skillet that has been well oiled, Cook cakes 4 to 5 minutes or until lightly browned.
  • Serve cakes with pasta sauce and more cheese if desired.
