Keto Chicken Parmesan Cakes

- 4 cups chicken cooked, finely diced
- 1 cup pork rinds smashed
- 2 eggs
- 1 TB heavy cream
- 1/2 cup parmesan cheese grated
- 2 TB Italian seasoning
In a medium bowl, mix all ingredients together, combining well.
Shape chicken mixture into patties, about 1/4 cup to 1/3 cup size.
In a cast iron skillet, or non-stick skillet that has been well oiled, Cook cakes 4 to 5 minutes or until lightly browned.
Serve cakes with pasta sauce and more cheese if desired.
