Keto Chicken Parmesan Cakes

Frequently appearing on Italian restaurant menus in the U.S., chicken parmesan can lead you to think it’s complicated to make. And made traditionally, it can be. Making it this way is easier, and so much fun!

Or when you’re looking for a comforting meal on a hectic weeknight, it’s a terrific choice in terms of time to make it and the finished taste.
While having Italian roots, Chicken Parmesan won’t be found on tables in Italy. Most likely evolving from the Italian eggplant Parmesan (parmigiana de melanzane, which means made with Parmesan), borrows the classic preparation of eggplant–where eggplant is battered and sautéed, then simmered in tomato sauce and covered in a melty blanket of cheese–and applies it to chicken breasts.

Keto Chicken Parmesan Cakes
Ingredients
- 4 cups chicken cooked, finely diced
- 1 cup pork rinds smashed
- 2 eggs
- 1 TB heavy cream
- 1/2 cup parmesan cheese grated
- 2 TB Italian seasoning
Instructions
- In a medium bowl, mix all ingredients together, combining well.
- Shape chicken mixture into patties, about 1/4 cup to 1/3 cup size.
- In a cast iron skillet, or non-stick skillet that has been well oiled, Cook cakes 4 to 5 minutes or until lightly browned.
- Serve cakes with pasta sauce and more cheese if desired.
