Keto Thin Mint Almond Clusters
If you aren’t snagging Girl Scout cookies this year because of your low-carb lifestyle, never fear- we’ve got you covered.
This snack is going to provide the next best thing. This treat includes roasted almonds with the familiar flavors of the fan favorite cookie, and a minty dark chocolate coating. Yum!
I spied these as a new snack up on the shelves at the beginning of the month at my local Costco… I thought to myself, wouldn’t that be a lovely treat made ketogenic.
The love of thin mints signature flavor goes a long way back, and many people wait all year to grab the original cookie. The official thin mints name wasn’t coined until 1963, but those beloved cookies have been a hit since 1939.
So instead of reaching for the high carb original, why don’t you satisfy your sweet and salty cravings with a low sugar, better for you snack that has plenty of fiber and protein but is still outrageously delicious.
THE BEAUTY OF ALMONDS:
Almonds are a nutrient dense superfood… They contain healthy fats, fiber, protein, magnesium, and vitamin E making them associating heart healthy plant-based snack.
You can also feel good that this includes real ingredients made straight from your home with absolutely no artificial flavors or colors. These are going to be perfect for sharing and a great snack for a boost of energy during the day or after a work out..
CHOCOLATE & MINT: A MATCH MADE IN HEAVEN
decadent and refreshing, chocolate and mint is one of the most satisfying pairs around.
Mint chocolate is a popular variety of flavored chocolate… Generally made by adding a mint flavoring or essential oil such as peppermint, spearmint or cream DeMenthe to chocolate.
Depending widely on the ingredients and the processed used, mint chocolate can give a very distinctive mint fragrance, or be extremely subtle. The chocolate component can be milk chocolate, dark chocolate, or white chocolate… And due to this, mint chocolate has no one specific flavor and so each chocolate-plus-flavor combination can be unique.
Mint flavoring:
Pure peppermint oil adds a crisp, refreshing flavor to your chocolate. I used a food grade pure peppermint oil.
It is very powerful and minty. When you use it as a flavoring, you want to use it sparingly, because essential oils are potent.
You can of course use just plain peppermint extract from the grocery store.
CJ’S FOLLOW-UP TASTE TEST:
Well one of the perks of being me, is that I get to taste test a lot of delicious keto foods, often multiple times before the actually recipe video is shot. This was one of those recipes where a couple of batches were made. This recipe is really easy, I can’t stress that enough. The YouTube video is less than 10 minutes long but I know you can make these in 5 minutes (not including the time they need to set). Everyone’s taste are different and if you don’t like mint, you don’t have to use it and these are still delicious. Give it try!

Keto Thin Mint Almond Clusters
Ingredients
- Ingredients:
- ½ cup sugar-free chocolate chips dark, milk, white
- 3 drops or to tastenatural food grade peppermint essential oil(or extract)
- ¼ cup chopped roasted almonds
Instructions
- Directions:
- Melt chocolate chips(we recommend Chocozero brand for best results) slowly using half power in 30 second increments until just barely melted.
- Stir well. Add peppermint oil. Stir well to combine. Using a silicone candy mold….place chopped nuts evenly into the cavities of the mold.
- Place chopped nuts evenly into the cavities of the mold. Slowly pour melted chocolate into the mold cavities.
- Chill for 30 minutes in fridge to harden. Remove and enjoy. Nuts could also be dropped by cluster onto parchment paper. Recipe may be doubled to make more cluster truffles.
- Makes 4 cluster truffles
