Keto Chicken Parmesan Soup

- 3 cups cooked chicken chopped
- 1/3 cup onion chopped
- 3 cloves garlic minced
- 4 cups chicken broth
- 2 cups water
- 2 cans diced tomatoes
- 2 cups low cal pasta optional
- 2 TB Italian seasoning to taste
- 1 cup Italian cheese shredded
Cook onion and garlic until tender and translucent. Add Seasonings and cook briefly.
Add broth, water and tomatoes. bring to low boil. Add pasta if using. Cook 8 minutes. Turn heat to simmer. Add chicken.
Bring to temperature. Serve topped with fresh cheese. Top with fresh basil if desired.
