Keto Chicken Parmesan Soup

Keto Chicken Parmesan Soup is a perfect soup for chilly winter weeknights. It’s warming and delicious and could not be easier to make.

If you’re craving a big bowl of comfort food, this soup totally delivers.

Autumn is in full swing here in the PNW, scraping the ice off my windshield in the morning and using the AC in the afternoon.

Regardless of where you live, this easy 30 minute one-pot meal is fantastic, any time of year!

This easy  low carb chicken soup is basically deconstructed chicken parmesan in a bowl. 

Big chunks of chicken in a rich tomato broth with a low carb pasta of your choice, or none at all and PLENTY of gooey Italian cheeses.

Since you’re starting with cooked chicken, this soup comes together super quick and easy in one pot with minimal effort. I utilized a rotisserie chicken here, but leftover chicken is great too!

I added pastabilities low cal pasta. It’s a treat, but so fun. You can totally omit the pasta. This soup is delicious without.

Ingredients

  • 3 cups cooked chicken chopped
  • 1/3 cup onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 cans diced tomatoes
  • 2 cups low cal pasta optional
  • 2 TB Italian seasoning to taste
  • 1 cup Italian cheese shredded

Instructions

  • Cook onion and garlic until tender and translucent. Add Seasonings and cook briefly.
  • Add broth, water and tomatoes. bring to low boil. Add pasta if using. Cook 8 minutes. Turn heat to simmer. Add chicken.
  • Bring to temperature. Serve topped with fresh cheese. Top with fresh basil if desired.
