This weeks recipe is Keto Low Carb Pancakes!  This is a slightly different version of a recipe we’d done years ago. It’s been updated a bit and the blog post is being updated as well. We love breakfast and believe you can have it anytime of the day, and pancakes are of course a staple of the breakfast menu.  This is one of those recipes that you just need to keep in your arsenal to help you succeed on Keto long term. Pancakes are the hero of the breakfast table. A little indulgent and yet still somehow appropriate first thing in the morning. Whether it’s a lazy Sunday morning, or a hurried weekday… These low-carb pancakes are easy to prepare.

As a consistent intermittent faster… I rarely eat breakfast in the traditional sense. While I don’t love having breakfast with pancakes first thing in the morning… I definitely never say no to indulging in pancakes for lunch or dinner.

We love simple, no-fail recipes here at CJ’s keto kitchen, and this recipe is just that. It’s quick to make and we are willing to bet you’ve got everything you need to make them right now.

In the past, we called on boxed mixes. Not anymore. Boxed mixes were good, but everything needed to make delicious low-carb pancakes already sits in most of our kitchens. So say goodbye to the boxed mix and don’t look back. This recipe is easy! The pancakes aren’t too sweet and are lightly scented with vanilla and cinnamon. They are scrumptious and are easily adapted to your favorite additions if desired.

We were excited to showcase choc zero brand syrups with this recipe. We have always just used regular sugar free table syrup from our local grocery store in the past. Here’s why we love choczero as an alternative… They are a small company, and it’s good to support small business, especially during these difficult times. And especially those companies that are making and producing low carb products. They contain no sugar alcohols, and some people react badly to those. They are also ethically sourced, GMO free and they taste great!

A few tips:

Softening your cream cheese in the microwave before adding it to your blender is ideal. It ensures even distribution and smooth texture.

CJ always teases me that my pancakes taste better than his… And I always tell him it’s because I add my love LOL… But really, I think it’s because I let them blend a bit extra. I think adding more air into your batter ensures a fluffier pancake in my opinion.

Lastly, when you are cooking your pancakes, the key is to cook them low and slow. Medium heat and no higher. When you have your heat on to high the pancake browns without cooking all the way through ,making flipping your pancake a messy situation, and creating an overcooked outside. Be patient… When bubbles start to show, you know it’s time to flip!

I (C.J.) made this recipe several years ago, this is a slightly updated version.  Anytime Sarah makes these they are always better than mine, they are lighter and fluffy.  When I make these they seem verse dense, and heavy. Keep in mind that almond flour is not regular flour so the taste and texture will be a bit different.  Let’s talk about sugar free syrups, we actually get questions about this very often.  For years we’ve just used Sugar-free Mrs. Butterworth, and we know that the ingredients in it aren’t the best for us, or anyone.  We received our first bottle of of the ChocZero Maple Syrup in a Keto Krate, and we ended up purchasing it via Amazon.  We enjoy how thick and rich the ChocZero syrup’s are and love, love the clean ingredients.  Based on that we are really glad to be working in collaboration with them, as we’ve found that the full range of there of products from there many flavors of syrups, there baking chips and their sugar-free candies are delicious and without a lot of the sugar alcohols that you find in many other products.  Let’s talk about Cost:  Yes, this product cost more than the Mrs. Butterworths that we’ve been purchasing.  However, because of the superior nature of the ingredients we feel it’s a great value especially in light that it is much better for us.  This is product is comparable cost wise to other Keto/Low Carb friendly syrups on the market.  We hope you enjoy this recipe!  Don’t forget you can share photos or your creations over in the Facebook Group or on Pinterest.

  • Start by adding your wet ingredients first into your blender
  • Start with eggs and water and cream cheese so you don't have anything get stuck at bottom.
  • After blending your wet ingredients, now let's add our dry ingredients

  • Add your almond flour, baking powder and natural sweetener
  • Blend until smooth, scraping down the sides if needed. Let batter sit for 2 minutes.
  • Heat a non-stick skillet to medium heat. For each pancake, pour 3 to 4 tablespoons of batter onto skillet.

  • Once you start to see little bubbles form, flip and continue to cook until pancake is browned on each side. Continue until you have used all pancake batter.
  • Serve pancakes topped with butter and sugar free syrup!
