Keto Cheesy Chicken Fritters
This weeks recipe is Keto Cheesy Chicken Fritters! These are very easy to prepare and the finished product is delicious. The recipe is very versatile as well and is a keto take on a very traditional dish. This is one of those recipes that you just need to keep in your arsenal to help you succeed on Keto long term. We hope you enjoy it!
These cheesy chicken fritters are a surprising way to use chicken, but it really works. Our cheesy chicken fritters are tender, juicy and so flavorful. If you love easy chicken recipes the way we do here at CJ’s keto kitchen, then these chicken patties are for you!
You could serve these as appetizers, or as a side item for dinner. These are a crowd-pleasing treat… And we really enjoy dipping them in a spicy mustard sauce, but they would be equally delicious with low-carb cocktail sauce or ketchup.
This recipe works well when you’re pressed for time… But if it’s mixed and you were patient, or choose to do a make ahead option… Letting it rest in the refrigerator for at least 15 to 20 minutes or up to overnight the results will be even more juicy and flavorful.
You will love the crispy cheese edges and juicy center of these chicken fritters. These are fabulous at room temperature, or chilled… Or hot out of the oven and you won’t be able to stop at just one, luckily we will have enough to share and for leftovers with this recipe. These would also reheat again very well in a buttered skillet. These would also be ideal stacked up in your lunchbox for easy meal prep during the work week.
There are many recipes for chicken fritters… And it seems to be a favorite regional food. But in this case they make a perfect keto meal, with just a few simple substitutes.
So what is a fritter anyway?
Here in the United States fritters are often made with a primary ingredient that is mixed with an egg and milk batter and either pan fried or deep-fried, generally wheat flour, cornmeal, or a mix of the two maybe used to bind the batter… Here in the states we also have corn fritters and apple fritters, but another regional favorite seems to be the zucchini fritter. Often seen at fairs and other hometown venues.
A few thoughts:
Using fresh herbs is really delightful here. As we move into summer, some of you may even be harvesting herbs from your garden!
I used a mixture of thyme, tarragon, and parsley… But sage ,chives, or any kind of herb that you enjoy with chicken would be equally wonderful. You could also go the Italian route and try adding fresh basil. Or a spicy southwestern version utilizing jalapeños would be fantastic as well.
I used cheddar, but any melty cheese will work, like mozzarella or provolone.
I utilized my new cast iron skillet, really because I’m enjoying playing with it right now, but I love the old fashioned crispness this brings to the fritter.
FOLLOW-UP TASTE TEST by C.J.
Well I must admit that I was surprised how well these turned out. While we were setting up to do the video I tasted the well drained canned chicken we used and wasn’t that impressed with the taste. However, the finished product was delicious and the addition of the mustard sauce made it even better. These aren’t to make, and preparation is fairly easy, so these would be great for a quick weeknight family meal. We always talk about keeping your keto simple, well this recipe is really simple. We experimented with tarragon as one of the fresh herbs we used and I must say that it elevated the flavor profile of the dish (thanks Bobby Flay). We hope you enjoy this recipe!
